Not all olive trees grow under the same conditions.

The village of Kastania sits near the crest of Mt. Taygetos, making it the highest of seven villages that cultivate Koroneiki olives along the mountain.

Unlike olive groves closer to sea level, our trees are exposed to:

  • Cooler mountain temperatures
  • Strong seasonal winds
  • Rocky, mineral-rich soil
  • Greater day-to-night temperature changes

These natural conditions influence how the olives mature throughout the growing season.

While altitude alone doesn't create flavor, it plays an important role in determining when the olives must be harvested—and that's where the magic happens.

The First Frost Changes Everything

Every autumn, families in Kastania begin watching the mountain.

Not the calendar.

The first frost.

Because our groves sit at a higher elevation, frost arrives much earlier than it does in lower regions. Waiting too long could damage the olives and affect the quality of the harvest.

Instead, our Koroneiki olives are carefully harvested before the first frost arrives, typically in late November or early December.

This early harvest is one of the defining characteristics of Kastania Organics.

Why Harvesting Earlier Matters

Many olive-growing regions allow olives to fully ripen before harvesting.

In Kastania, nature doesn't give us that luxury.

By harvesting slightly earlier, the olives retain characteristics that produce a distinctly different oil.

Early harvested olives often produce early harvest olive oil that is:

  • Rich and robust
  • Fresh and vibrant
  • Wonderfully aromatic
  • Naturally peppery
  • Full of character

Although harvesting early yields less oil per olive, it allows us to preserve the bold flavor profile that generations of Kastaniotes have cherished.

Sometimes, quality is worth producing a little less.

Our olive oil begins with the Koroneiki olive, one of Greece's most celebrated olive varieties.

Despite its small size, the Koroneiki olive is known for producing exceptionally high-quality extra virgin olive oil with remarkable complexity and balance.

Combined with the mountain climate of Mt. Taygetos and our early harvest methods, these olives create an oil that is intensely flavorful while remaining smooth enough for everyday cooking, dipping, and finishing dishes.
